Chicken Pasta
I think it’s funny …I realized yesterday that when I posted a recipe that I don’t do that very often. Cooking is such a big part of my life….weird right? With all of these kids? Who would’ve thought? hehe. I also cook a lot for the church functions and get plenty of requests for certain dishes that I make. I love sharing recipes…and I usually change things up a bit to our liking. I really eat most things…I am not all that picky. However I do like a lot of flavor and spice..which I know not everyone does. 3 of my boys are like me..and then the rest of the family likes everything a bit bland. I love lots of veggies and substitutes for meat…nobody else in my family does….so I am constantly trying to find different things to try.
My friend Carla is so cute…she says she needs to learn a new recipe when she comes over so she can take it back home and share with the rest of our friends/family. So when she comes she asks what I am going to make for her. LOL
Well a few trips ago I made this chicken pasta for her. This is a family hit for everyone in our house. Never any leftovers and quite tasty. Carla also made it at home and it was a hit. I will try to cut the recipe down for a normal size family. :)
1 box of pasta…it can be whatever you have in your pantry. I have used spaghetti, rotini, shells..whatever.
1 jar of caesar dressing ( cant use nonfat)
1 onion
1 package of mushrooms
4 chicken breasts
1 jar of artichoke hearts (marinated)
1 cup of grated Parmesan cheese
1 cup of bread crumbs
1 tablespoon of minced garlic
Cook pasta per instructions until Al dente ( it will get further cook time).
While the pasta is cooking you can cook your chicken in a pot with all other ingredients EXCEPT dressing, cheese and breadcrumbs. When I use the artichoke hearts I even pour the marinade in the jar..just adds a bit of flavor and then you don’t need to add the oil in the pot of chicken. I dice the chicken after it’s cooked all the way through. Take it off the heat ..pour in the whole bottle of caesar dressing ( I have used ranch as well….it was good) and cheese mix in drained pasta. Place in a 9×13 casserole dish top with bread crumbs then bake at 350 until bubbly hot and bread crumbs are golden brown.
