So I shared this recipe on Fb. I am actually lactose intolerant….but I struggle with not eating dairy because I have already given up so much. So I am eating this casserole and I just deal with the consequences. I tend to eat a lot of the same things and breakfast is one of those things I tend to rotate between 3 things. This casserole. Bacon and eggs. Or avocado slices, bacon and tomato.

I am practicing a low car/ high protein diet. It seems to be the only thing that works for me to keep my weight under control. I have gained a bit of weight back in the last 6 months because I let carbs creep back in…now I am back to eating low carb and the scale is going down again. This is going to be a struggle for the rest of my life. But I know what I need to do for my body.

This is a low carb breakfast casserole I make at the beginning of the week ..then just reheat personal servings daily. It’s so yummy!
2 bags of Riced cauliflower (savory herb flavor…I don’t think it matters what flavor or plain). This is a substitute for potatoes.

Then I put in in the bottom of my greased dish. With a small onion chopped, chopped mushrooms and broccoli. (I’ve also used kale) (you could eliminate the extra veggies if you want)

Then I mix in shredded cheese. Can be any cheese you like. Cheddar, pepper jack , Swiss whatever. I’d say 2 cups.

After all of that is tossed together & spread evenly in the dish, I scramble 8 eggs and add some salt & pepper. Pour that over the veggie mixture.
While I’m chopping & mixing all of that I cook a pound of breakfast sausage (any kind you like..I do the spicy) and when that’s browned I add in a box of cream cheese until it’s all melted and mixed in well with the sausage. Then you layer the sausage mixture over the veggie egg mix and bake at 350 until all the egg cooks through (that just depends on how shallow or thick your dish is). The portions also freeze well if you need to portion it out.

This casserole creates about 14 -16 portions for me.

I will try to share more of my low carb -high protein recipes. I have been doing this for quite some time….and I experiment and find what works for me.
