Tuscan Chicken Sandwiches

Rob loves these sandwiches.

I kind of copied them from Safeway Deli. They are very similar but we don’t have all the same sauces. 🙂

You need:

french bread a loaf cut into sandwich size portions

mozarella cheese

grilled chicken cut into strips (hot or warmed)


slices tomatoes

Marinated artichoke hearts (chopped up a bit)

Italian Caesar dressing ( i think it’s by kraft)

Put oven on Broiler setting

Place the bread face up on a broiler rack

put the chicken on one side of bread put a good dose of dressing over that.

Top with artichokes, tomatoes and cheese. Place in broiler until cheese is melted and browned a bit. Take it out put lettuce on the top and the toasted top of the bread. enjoy right away.

This is a Rob favorite. The kids like them too. But it’s kind of labor intensive making the chicken and what not…then grilling the sandwiches when you have so many hungry people.  But we do this sometimes after church on Sunday.
