Spinach Dip

I kind of made up this recipe based on other dips I have tried.

I was unsure how it would turn out. But it was a hit on Christmas Eve.

Preheat oven to 350.

I used a big bag of Fresh spinach

16 oz of softened Cream cheese

1 can of green chilis -it was the bigger can say 4oz.

12 oz of cheddar cheese

1 cup of Mayonnaise

1 cup diced tomatoes

In a mixing bowl mix cream cheese, mayo, green chilis, half of the cheddar cheese. When you get that to a creamy consistency. Then get a good mixing spatula and mix in fresh spinach. It looks really dry and seems like it shouldn’t work out. I am sure it would work with frozen spinach and not be as difficult to mix. But I really like working with fresh ingredients when I can.  🙂 I just made sure that all the spinach was covered. I know when spinach starts cooking it is mostly water & would cook down.  I knew after I baked the dip it would all come  together in a nice consistency for a dip. I put the mix in a medium sized dish & covered with the rest of the cheddar cheese to bake at 350 for about 35 mins.

I didn’t keep track of time. I could smell it and looked it was  bubbly with all the cheese melted on top. Then top with the diced tomatoes for a yummy dip. Let me know how you like it! Blessings C
