One Pot Pasta

So I made this great past this week…..I saw something similar on pinterest/Fb a few weeks ago.

I didn’t bother to look up what the recipe was again…I just took the general concept and thought I would try it out.

I am always looking for quick easy meals. I am also looking for healthy meals. I have been watching my calories lately. 🙂

So I made my family some meaty goulash…and I made this one pot pasta for myself…and whomever wanted this.

All of these ingredients are just what I happened to have in my kitchen…..You can add plenty of other veggies. or take out any of these. You just dump everything in one stock pot or dutch oven pot big enough to hold all of it. You must have a lid as well.

I had lots of fresh garden tomatoes (that everyone is trying to get rid of right now because of the plentiful harvests) So I diced them up and put them in my pot.

I would say about 6 big tomatoes.

1 can of olives…so I cut those up and also put in the juice from the can.

1 jar of marinated artichoke hearts. …..dressing as well in the pot. I kind of mashed them a bit.

1 large onion

fresh basil. You could also use Italian seasoning

1 package of mushrooms

1 envelope of Savory garlic and herb mix from lipton ( its next to the onion soup) ( you could also use any form of garlic)

1 pound of pasta

1 bag of shimp ( you can add this near the end)

You could use any meat…I was just using this because it’s low in calories.

Between the tomatoes and the juice from the two can of veggies  I was sure had enough moisture to cook the pasta. I did. You just turn the pot on medium heat, put on the lid, stir every once in awhile  until pasta is cooked all the way through. The starch in the pasta actually thickens up and creates a light sauce mixed with the juices from everything else. Very yummy. You can top it with some fresh grated Parmesan cheese….:)

I am a veggie I think you could use zucchini, spinach, squash, carrots, celery, peppers…..whatever you have on hand. Very forgiving. Let me know if you try it out. Whatcha think?
