This is not a traditional Shepherd’s pie…this is the quick easy version.
Most members of my family will eat this. I have two kids that don’t eat potatoes which just kills me. Who doesn’t like mashed potatoes? It’s weird. Not to mention they have Irish in them? Potatoes is a staple. So we eat a lot of pasta & rice due to this. But every now and again I will make this and the 2 that don’t eat it get leftovers.
Preheat over to 350
Browned ground beef a couple of pounds
2 cans of tomato sauce
2 cans of shoe string green beans
mashed potatoes (I never measure this….I would say a medium pot sized worth so maybe 6-7 potatoes worth) Then prepare your mashed potatoes as you normally do.
grated cheddar cheese
I brown the meat with onion, garlic powder and salt & pepper. Drain and then mix in the tomato sauce & green beans.
Layer that mixture in the bottom of a 9×13 dish
Then cover with the potatoes, Sprinkle the cheese on top. Bake in the oven for 45 minutes to an hour probably. Check it …when the cheese is melted and its heated all the way through it’s finished.
Let me know if you try it. I learned this recipe as a teenager from my friend’s mom. It has stuck with me and it’s a comfort food. For sure.
