I just have to say this is a comfort food for me. I love this soup. I have always loved potato soup. But it took me awhile to refine my recipe. It’s a total comfort food.
I also have to say this is in no way healthy or low fat. So beware.
1 pound of bacon
2 large onions
7-8 medium sized poatoes
Knorr Chicken bouliion
2 garlic cloves
half & half Cream
I take my big soup pot and throw in the bacon. I cook it on medium heat until crispy. Stirring frequently …you want the browning bits on the bottom of the pan. When the bacon is nice & crispy take it out of the pan leave in the drippings.
Add the chopped onions, garlic and basil. Let the onions cook for a bit in the grease….when you start to see them go translucent it’s time to add the chicken bouillon & potatoes ( peeled & chopped) Add enough water to cover the top pf the potatoes. Cook on medium low heat until the potatoes are done. When the potatoes are done add the half & half to desired thickness (or fill the pan) I will also use some cornstarch to thicken the soup. Add Tabasco to taste. Chop the bacon and add shredded cheddar cheese. I add it in the pot before I serve it because my family goes to crazy on the garnish. But if I serve it for other people I serve the cheese & bacon bits on the side.
