Well Marilyn asked me what was for dinner tonight….I thought I would share my recipe. I made this up while looking in the cupboards for something to prepare and it is really good (I think)…Some of my best recipes come from odd and end bare cupboard recipes….am I alone here? I try to new concoctions all the time just to use up what I’ve got…so here we go:
I make for a big family so I double everything
1 box of rotini pasta
Cook it according to package directions while you are preparing everything else.
1 chopped onion
mushrooms (fresh or canned) sliced
1 package of pepperoni
1 can of olives (sliced)
1 package of cream cheese
1 jar of balsamic vinaigrette
i tsp minced garlic
Italian bread crumbs
I put my cream cheese, minced garlic and dressing in the blender …you blend that until it’s creamy.
After the pasta is cooked and drained add the dressing mix and the meat and veggies. Mix well. Then transfer to a baking dish top it with the italian bread crumbs and bake until bread crumbs are golden brown and the sauce is bubbly.
