Well I have been wanting to try Cheeseburger soup for awhile now….Cheeseburgers are a form of currency in my house. NO kidding.
I love Soup. I love Soup more now that I have had surgery. It just goes down so easy for me….and it feels hearty. instead of just eating salad & protein. So I am going to love Fall & winter even more. 🙂
I wish I had taken pictures last night of the soup…but sadly I didn’t ( good thing this isn’t a food blog…I might be in trouble…LOL! I just write these recipes down for myself and my friends who would like to try them.
So I will explain what I did. I made this in my crock pot.
Got my crock pot out….it’s a bigger one….6.5 quarts. It filled my whole crock pot. So I put in my recipe calculator 15 servings. ( obviously, I can’t eat a full serving). But a full serving is 300 calories. (give or take)
1 large onion chopped
4 medium to large carrots
5 celery stalks chopped
2 cups of chopped kale
about 25 quartered radishes ( these are a potato substitute….they lose their bite and color..they look& taste like a potato and only have 4 carbs per cup rather than 40. )
I used fresh herbs but you can use dried.
I used Fresh sage, basil and thyme. I am pretty generous with these simply because I love them. 🙂
I added salt & pepper just a dash of each.
Then I added about 4 cups of chicken stock.
The stock didn’t cover the whole pot of veggies & herbs….I knew they would shrink down. I set the crock pot on high for 3-4 hours. I stirred once at lunch time just to even everything out and covered everything. then turned it on low. If you need to leave this unattended..you could add a bit more stock if you need. I turned it to low and let it cook for a few more hours.
Once I knew I had about an 60-90 minutes left until I served dinner I added these ingredients:
2 pounds of browned ground beef
2 cups of half & half cream ( i know this is really high in calories……but split 15 ways isn’t terrible…if you want to add low fat you can certainly do that for even lesser calories)
3 cups of shredded cheddar cheese. You can use mild or sharp
1 cup of shredded Parmesan cheese
.5 cup of blue cheese crumbles
Honestly…you can use any flavor of cheeses you like …these just happened to be what I had on hand….I think pepper jack would be yummy!
Then I just let it cook and melt into fabulousness!
Now this worked up into a soup…not a chowder. My family said they would have preferred it to be thick & creamy like a chowder…because they are just picky about everything. So if you wanted to add the extra starch and bring it to a chowder status I think you could easily. I didn’t because I am trying to cut carbs. …..I thought it was yummy as a soup.
